Cinnamon Sugar French Toast Muffins with a Lemon Twist

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners. This is a tremendous step to ensure that the muffins bake evenly and release easily once cooled.

  2. In a large bowl, mix the flour, baking powder, salt, cinnamon, and granulated sugar. Stir until all dry ingredients are well combined, creating a wonderful base for your muffins.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be cautious not to overmix; a few lumps are perfectly fine.

  5. Fill each muffin cup about 2/3 full with the batter. This will allow room for the muffins to rise while baking and helps achieve that perfect fluffy texture.

  6. In a small bowl, mix the additional sugar and cinnamon for the topping. This simple mixture will add a delicious crunch on top of each muffin.

  7. Sprinkle the cinnamon sugar mixture on top of each muffin, ensuring every morsel has a chance to bask in that sweet, spiced goodness.

  8. Bake for 18-20 minutes, or until a toothpick comes out clean from the center. Your kitchen will smell tremendously inviting at this point, giving a true sense of anticipation.

  9. Let cool for a few minutes before transferring the muffins to a wire rack. Allowing them to cool slightly ensures that they don’t become too soggy at the base.
