Cilantro Lime Shrimp & Avocado Salad

Directions

  1. In a large mixing bowl, combine the cooked shrimp with the lime juice, olive oil, chopped cilantro, and a sprinkle of salt and pepper. The shrimp should marinate for about 10 minutes. This step allows the flavors to meld, creating a tremendous enhancement to the dish.

  2. While the shrimp marinates, take a large bowl and layer the arugula or mixed greens as the base. This bed of greens is both nutritious and flavorful, providing a wonderful backdrop for the other ingredients.

  3. Gently arrange the sliced avocados and thinly sliced red onion on top of the greens. The creaminess of the avocado adds a lovely texture that complements the lightness of the salad.

  4. After the shrimp has marinated, spoon it generously on top of the greens and avocados. Don’t forget to drizzle any leftover marinade over the top for added flavor. This dressing ties all the elements together in a tremendous way.

  5. If you like a bit of heat, add thin slices of the red chili over the top and sprinkle some red pepper flakes for garnish. Finish with a bit more chopped cilantro for an aromatic touch.

  6. Serve immediately, either as a light dinner or alongside tortilla chips for a crunchy compliment.
