Chocolate Sundae Crepes

Directions

  1. Prepare the crepes: In a large mixing bowl, combine the all-purpose flour, eggs, milk, melted butter, and a pinch of salt. Whisk together until the mixture is smooth and free of lumps. The tremendous batter will have a thin, pourable consistency.

  2. Cook the crepes: Heat a non-stick skillet over medium heat. Lightly grease the skillet with butter or cooking spray. Pour about ΒΌ cup of the crepe batter into the skillet, tilting the pan to ensure an even layer. Cook for about 1-2 minutes or until the edges begin to lift and the bottom turns golden brown. Carefully flip the crepe using a spatula and cook for an additional 1 minute. Repeat with the remaining batter and stack the crepes on a plate.

  3. Assemble the sundae crepes: To each crepe, place a generous scoop of ice cream in the center. Drizzle with chocolate sauce.

  4. Add toppings: Finish off your crepes by topping them with a dollop of whipped cream, a sprinkle of chocolate chips, and a cherry on top for a tremendous burst of color and flavor.

  5. Serve immediately: Fold each crepe over the filling and serve while the ice cream is still wonderfully cold.
