Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan to ensure easy release after baking.

In a medium bowl, combine the chocolate cookie crumbs and melted butter until well mixed. Press this mixture firmly into the bottom of the prepared pan, creating a solid crust.

In a large mixing bowl, beat the softened cream cheese and granulated sugar together until the mixture is smooth and creamy. The goal is to achieve a tremendous consistency without any lumps.

Add one teaspoon of vanilla extract to the cream cheese mixture, and mix well until it’s fully incorporated.

Add the eggs one at a time, beating well after each addition. Ensure that everything is mixed thoroughly for an even texture.

Blend in the sour cream and heavy cream, mixing until the filling is silky smooth. This step is crucial for maintaining the creamy quality of the cheesecake.

Stir in the melted chocolate until the batter is fully combined. Make sure there are no streaks left; you want a rich and uniform appearance.

Pour the cheesecake batter over the crust in the springform pan, ensuring an even layer.

Bake in the preheated oven for 55-60 minutes. The center should be just set while the top appears slightly dry when done.

After baking, allow the cheesecake to cool in the oven with the door slightly ajar for about one hour. This helps prevent cracks from forming. Then, refrigerate for at least 4 hours, or ideally overnight for best results.

For the mousse layer, sprinkle gelatin over cold water in a small bowl and let it stand for 5 minutes. Heat gently until the gelatin dissolves completely.

In a new bowl, whip the heavy whipping cream and powdered sugar together until soft peaks form. This will give the mousse its luscious texture. Add the dissolved gelatin and continue to whip until stiff peaks form.

Spread the mousse evenly over the chilled cheesecake layer. Refrigerate again for at least one hour to let everything set.

Just before serving, arrange the sliced strawberries on top of the mousse layer. To enhance the strawberries’ natural sweetness, warm the strawberry jam in the microwave for a few seconds, making it easier to brush over the fruit.
