The Base
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
The Filling
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips, melted and slightly cooled
The Topping
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup strawberry jam

Directions

Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan to ensure easy removal of the cheesecake later.

In a medium bowl, combine the chocolate cookie crumbs with the melted butter. Mix until all crumbs are coated. Press this mixture firmly into the bottom of the prepared pan to form a solid crust.

In a large mixing bowl, beat the softened cream cheese and granulated sugar using an electric mixer. Beat until the mixture is smooth and creamy, creating a tremendous base for your filling.

Add the vanilla extract to the cream cheese mixture and mix well to incorporate its sweet aroma.

Add the eggs one at a time, ensuring to beat well after each addition. This helps to create a light and fluffy texture in your cheesecake.

Blend in the sour cream and heavy cream until the mixture is completely smooth. This step adds richness and a tremendous creaminess to your cheesecake.

Stir in the melted chocolate gently until it is fully incorporated, creating a beautifully rich color and taste in your batter.

Pour the cheesecake batter over the crust in the prepared springform pan, spreading it evenly.

Bake in the preheated oven for 55-60 minutes. The cheesecake should be just set in the center and the top should look slightly dry.

Once baked, allow the cheesecake to cool in the oven with the door slightly ajar for 1 hour. This will help prevent cracking. After cooling, refrigerate the cheesecake for at least 4 hours, or preferably overnight.

Before serving, arrange the sliced strawberries beautifully on top of the cheesecake. To add a glaze, warm the strawberry jam in the microwave for a few seconds until it is easily spreadable. Brush it over the strawberries to create a shiny, inviting finish.
