Chocolate Payday Pie with Crunchy Peanut Topping

Directions

  1. Prepare the Crust: Start by preheating your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, cocoa powder, granulated sugar, and melted butter. Stir the mixture until it resembles wet sand. Press it firmly into the bottom of a pie pan to form a solid crust. Bake for 10 minutes. Once done, remove it from the oven and let it cool.

  2. Melt the Chocolate: In another bowl, melt the chocolate chips. You can do this conveniently in the microwave, heating in short bursts, stirring in between. Alternatively, if you prefer the stove method, use a double boiler to melt the chocolate gently. Once melted, pour the chocolate into the cooled crust and spread it evenly for a smooth finish.

  3. Create the Peanut Butter Layer: In a separate bowl, combine peanut butter and powdered sugar. Mix until it becomes smooth and creamy, with a tremendous texture that’s easy to spread. Gently place this glorious mixture over the chocolate layer, taking care to spread it evenly.

  4. Add the Crunchy Topping: Next, sprinkle the chopped peanuts over the peanut butter layer. This adds a delightful crunch and enhances the pie’s visual appeal. The contrast of textures will leave everyone wanting more.

  5. Chill the Pie: Finally, chill the pie in the refrigerator for at least 2 hours before serving. This cooling time allows the layers to set beautifully, resulting in a firm and delightful slice.
