Chocolate Ganache Cheesecake

Directions

  1. Start by grinding the chocolate cookies into a fine powder using a food processor. Combine the cookie crumbs with the melted butter until the mixture resembles damp sand. Press this mixture firmly into the bottom of an 8-9 inch springform pan. Chill the base in the refrigerator for at least 15 minutes to get it firm and ready for the filling.

  2. In a mixing bowl, beat the cream cheese and granulated sugar together until the mixture is smooth and creamy. Add the eggs one at a time, mixing well after each addition. Once fully blended, pour in the melted dark chocolate and heavy cream, stirring until combined. Then, gently mix in the cocoa powder, cornstarch, vanilla extract, and chocolate chips. The mixture should be extremely smooth and have a tremendous creamy consistency.

  3. Pour the cheesecake filling over the chilled cookie base. To ensure even baking, wrap the bottom of your pan in aluminum foil and place it in a deeper baking tray. Fill the tray with hot water to create a bain-marie, which will help bake the cheesecake gently. Bake in the preheated oven at 320°F (160°C) for 55-60 minutes until the edges are set and the center has a slight jiggle.

  4. After baking, turn off the oven and slightly crack the door open, allowing the cheesecake to rest for about an hour in the oven. This gradual cooling process helps prevent cracks. Once cooled, transfer the cheesecake to the refrigerator and let it chill for at least 4 hours or overnight for optimal flavor and texture.

  5. To prepare the ganache, heat the cream in a small saucepan over medium heat until it comes to a boil. Remove from heat and add the dark chocolate, stirring continuously until it melts completely and forms a smooth mix. Allow it to cool slightly before pouring it over the chilled cheesecake. Refrigerate for an additional 30 minutes to set the ganache.

  6. When ready to serve, remove the cheesecake from the springform pan and decorate it with your choice of optional toppings like chocolate chips, cocoa powder, chocolate sauce, or fresh fruits like strawberries or raspberries.
