Chocolate Coconut Cake

Directions

  1. Prepare the Cake: Begin by preheating your oven to 170°C (340°F). In a mixing bowl, beat the eggs and granulated sugar together until the mixture becomes light and fluffy, resembling a pale yellow hue. This aeration is essential for a tremendous lifting of the cake. Next, combine the milk and vegetable oil, mixing until fully incorporated.

  2. Combine Dry Ingredients: Sift in the cocoa powder, flour, baking powder, and vanilla into your wet mixture. Mix gently until there are no dry flour spots. Be careful not to overmix, which can lead to a tough cake texture. Pour the batter into a 22–24 cm round cake pan lined with parchment paper.

  3. Bake the Cake: Place the pan in the preheated oven and bake for 30–35 minutes. You’ll know it’s done when a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan before transferring it to a wire rack.

  4. Prepare Coconut Cream: In a saucepan, mix together the milk, sugar, and cornstarch. Cook over medium heat while stirring continuously until the mixture thickens—this should take a few minutes. Once thickened, remove from heat and stir in the butter and coconut. Set aside to cool.

  5. Make Chocolate Sauce: In another saucepan, heat the milk, cocoa powder, and sugar over medium heat until bubbling but not boiling. Then, add the dark chocolate, held just shy of boiling, allowing it to melt into the mixture. Once fully combined, stir in the butter before removing from heat.

  6. Assemble the Cake: Cut the cooled cake in half horizontally to create two layers. Spread a generous amount of the coconut cream over the bottom layer. Carefully place the top layer on the coconut cream and gently press down. Pour the warm chocolate sauce over the top layer, allowing it to drip down the sides—this creates a beautiful presentation.

  7. Serving Suggestion: For an elegant finish, decorate the top with additional coconut, chocolate shavings, or crushed nuts. Let the assembled cake rest in the refrigerator for 2–3 hours. This resting period enhances the flavors, resulting in a more tremendous dessert experience.
