Chicken Shawarma with Garlic Sauce

Directions

  1. In a medium-sized bowl, combine the yogurt, olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, salt, and pepper. This blend creates a tremendous marinade that enhances the chicken’s flavor profile.

  2. Add the chicken thighs to the marinade, ensuring each piece is well-coated. For the best results, allow the chicken to marinate for at least 1 hour, though overnight is preferable for a more intense flavor.

  3. Preheat either a grill or a skillet over medium-high heat. Once hot, place the marinated chicken in the pan or on the grill. Cook for about 5-7 minutes on each side, creating a beautiful golden-brown crust while cooking through to an internal temperature of 165°F.

  4. Once cooked, remove the chicken from heat and let it rest for a few minutes. This allows the juices to settle, resulting in a tender bite that is truly tremendous.

  5. While the chicken is resting, prepare the garlic sauce. In a small bowl, combine the mayonnaise, minced garlic, lemon juice, water, and a pinch of salt. Mix until smooth and set aside.

  6. After resting, slice the chicken into thin strips. Serve the sliced chicken in warm pita bread topped with fresh lettuce, diced tomatoes, and cucumber. Drizzle the prepared garlic sauce generously over the top.
