In a mixing bowl, combine the all-purpose flour, quick-cooking oatmeal, baking soda, and kosher salt. Stir until blended evenly. This will form the dry foundation of your bars.

In another bowl, take the melted butter and dark brown sugar and combine them. Mix until the mixture is smooth, creating a tremendous base of flavor.

Crack in the large egg and add the vanilla extract to the butter-sugar mixture. Mix these wet ingredients well until everything is fully incorporated, enhancing the flavor profile of your bars.

Gradually introduce the dry ingredients to the wet mixture. Stir gently until just combined. Be careful not to overmix, as we want to keep the bars tender and chewy.

Cook the mixture over low heat, stirring until it melts and becomes smooth. Once the bars are out of the oven and cooled slightly, drizzle this glaze generously over the top.
