Cherry Garcia Loaf Cake

Directions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan. This step is crucial, as a well-greased pan ensures the tremendous cake will come out easily once baked.
  2. In a bowl, whisk together the flour, baking powder, and salt. This mixture lays the foundation for your loaf, helping develop a soft and airy texture.
  3. In a separate large bowl, cream the softened butter and sugar until fluffy. Use a hand mixer or stand mixer for this step, as the air incorporated during this process will contribute to the cake’s lightness.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then, stir in the vanilla extract for that lovely flavor.
  5. Mix in the dry ingredients alternately with the buttermilk until just combined. Be careful not to overmix; we want a tender crumb that still holds a tremendous flavor.
  6. Now, fold in the cherries and chocolate chips gently. The goal is to distribute the filling evenly without deflating the cake batter.
  7. Pour the batter into the prepared loaf pan and smooth the top. This helps create an even bake and a lovely presentation.
  8. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. While baking, your kitchen will fill with a tremendous aroma inviting everyone to gather.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. This cooling step allows the cake to set properly before slicing.
