Directions
- Preheat your oven to 350°F (175°C) and grease a loaf pan. This step is crucial, as a well-greased pan ensures the tremendous cake will come out easily once baked.
- In a bowl, whisk together the flour, baking powder, and salt. This mixture lays the foundation for your loaf, helping develop a soft and airy texture.
- In a separate large bowl, cream the softened butter and sugar until fluffy. Use a hand mixer or stand mixer for this step, as the air incorporated during this process will contribute to the cake’s lightness.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then, stir in the vanilla extract for that lovely flavor.
- Mix in the dry ingredients alternately with the buttermilk until just combined. Be careful not to overmix; we want a tender crumb that still holds a tremendous flavor.
- Now, fold in the cherries and chocolate chips gently. The goal is to distribute the filling evenly without deflating the cake batter.
- Pour the batter into the prepared loaf pan and smooth the top. This helps create an even bake and a lovely presentation.
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. While baking, your kitchen will fill with a tremendous aroma inviting everyone to gather.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. This cooling step allows the cake to set properly before slicing.
