Cherry Cheesecake Bars

Directions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish. This will help your bars slide out easily once they are baked and cooled.

  2. In a bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of the prepared baking dish to form a crust. The mixture should be compact and even.

  3. In another bowl, beat the cream cheese and sugar until smooth. This blend should be creamy and free of lumps; the sugar helps to sweeten the cheese beautifully.

  4. Add the eggs and vanilla extract, mixing until well combined. The vanilla adds a tremendous aroma that will fill your kitchen with warmth.

  5. Pour the cream cheese mixture over the crust and spread evenly. It’s important to ensure an even layer; this contributes to the visually appealing look of the bars once cut.

  6. Bake in the preheated oven for 25-30 minutes until set. You’ll know they are ready when the edges slightly golden and the center is firm but jiggles just a bit.

  7. Allow to cool, then top with cherry pie filling. The cherries provide that vivid splash of color and sweet-tart flavor, truly elevating the dish.

  8. Chill in the refrigerator for at least 2 hours before slicing and serving. Chilling gives the bars time to firm up, ensuring clean edges when cut.
