Cheesy Taco Potatoes

Directions

  1. Preheat the oven to 400°F (200°C). This initial step sets the stage for the tremendous baked goodness to come.

  2. Wash and dice the Russet potatoes into small cubes. This ensures even cooking and allows the potatoes to absorb the flavors of the filling beautifully.

  3. In a large skillet, cook the ground beef over medium heat until browned. Be sure to stir frequently to ensure even cooking. Drain any excess fat, as this will enhance the dish’s overall flavor.

  4. Next, stir in the taco seasoning and water. Allow it to simmer for about 5 minutes. The seasoning will meld with the beef, creating a tremendous aroma that fills your kitchen.

  5. In a baking dish, layer the diced potatoes at the bottom. This creates a sturdy base for the filling, ensuring each bite is packed with flavor.

  6. Spoon the beef mixture evenly over the potatoes, spreading it out to cover the base completely.

  7. Cover with foil and bake for 30 minutes. This step helps the potatoes steam and cook through.

  8. After 30 minutes, remove the foil and bake for an additional 15 to 20 minutes until the potatoes are tender and slightly crispy on the edges.

  9. Once baked, remove from the oven and top with sour cream, green onions, and diced tomatoes before serving. The finishing touches will add brightness and a refreshing crunch.
