Directions
-
Preheat your oven to 400°F (200°C). This initial step is crucial as it prepares the environment for perfectly baked potatoes.
-
Scrub the potatoes under cold water to remove any dirt. Using a fork, poke holes all over the potatoes. This allows steam to escape while they bake, ensuring they are cooked properly. Place the potatoes directly on the oven rack and bake for about 45-60 minutes until tender.
-
In a skillet over medium heat, cook the ground beef until it becomes browned. Stir frequently, breaking the meat into smaller pieces as it cooks. Once cooked, drain the excess fat to keep the filling lean.
-
Stir in the taco seasoning along with the water into the skillet. Mix well and let it simmer for about 5 minutes. This step ensures the flavors meld together beautifully and gives the filling a tremendous depth of flavor.
-
Once the potatoes are baked, remove them from the oven and allow them to cool for a few minutes. Cut each potato in half lengthwise and scoop out some of the insides into a mixing bowl. Be careful not to scoop too deep; a little potato should remain to keep the skin intact.
-
Mix the scooped potato with the seasoned beef mixture and the shredded cheese. This combination creates a tremendous filling that is bursting with flavor.
-
Refill the potato halves with the beef and cheese mixture. Place them back in the oven for about 10 minutes, or until the cheese is melted and bubbly. This final touch gives your dish that restaurant-style finish.
-
Serve hot, and top with optional sour cream and chopped green onions for an extra burst of flavor and freshness. Enjoy the warmth of cheesy goodness with every bite!
