Cheesy Stuffed Poblano & Beef Burrito with Mexican Rice

Directions

  1. Cook the Mexican rice: Heat oil in a saucepan over medium heat. Add the rice and toast it until lightly golden, which brings out its nutty flavor. Stir in the chicken broth, tomato sauce, cumin, and a pinch of salt. Cover the saucepan and let it simmer for about 18–20 minutes, or until the rice is tender and has absorbed the liquid.

  2. Prepare the beef filling: In a large skillet, heat the oil over medium heat. Add the diced onion and ground beef, cooking until the beef is browned—this should take about 5–7 minutes. Make sure to drain any excess fat after cooking to keep your burrito from becoming greasy.

  3. Season the beef: Once browned, season the beef with chili powder, cumin, paprika, garlic powder, and salt and pepper to taste. Let it simmer for an additional 3–4 minutes, allowing the flavors to meld together beautifully. The aroma will be tremendous and mouthwatering.

  4. Roast the poblano peppers: For the poblanos, you can roast them over an open flame or place them under a broiler until they are charred. Once roasted, place them in a bowl and cover with plastic wrap to steam them for about 10 minutes. This will make peeling them much easier. After steaming, peel, remove the seeds, and then slice into long strips.

  5. Warm the tortillas: To make wrapping your burritos easier, heat the tortillas in a dry skillet over medium heat until they are warm and flexible. This will help prevent tearing when you fill them.

  6. Assemble the burritos: Each tortilla is a canvas waiting to be filled. Start by adding a generous scoop of Mexican rice, followed by the seasoned beef, roasted poblano strips, and a handful of cheese. Be generous with the cheese; it’s the key to a tremendous melty goodness!

  7. Roll tightly into burritos: Fold the sides of the tortilla inwards, then roll from the bottom to create a tight burrito. Ensuring a tight roll prevents the filling from spilling during cooking or serving.

  8. Optional grilled finish: For an additional layer of flavor, place the burritos seam-side down in a hot skillet. Grill them until the exterior is golden and crispy, which enhances the overall texture.

  9. Serve hot: Slice each burrito in half to reveal the glorious filling inside. Serve immediately while hot, perhaps with a side of sour cream and a sprinkle of chopped cilantro for that extra burst of flavor.
