Begin by heating a large skillet over medium heat. Add the lean ground beef into the skillet and cook until it’s fully browned. This usually takes about 6-8 minutes. Be sure to drain the excess grease afterward, as you want your dish to be flavorful but not greasy.

Once the beef is cooked, add in the diced yellow onion. Sauté the onions until they’re softened and translucent, creating a tremendous aroma that fills your kitchen. This step typically takes around 3-4 minutes.

Next, stir in the can of Rotel diced tomatoes and green chilies, along with the uncooked rice and beef broth. Bring this mixture to a boil, allowing the flavors to meld beautifully.

As soon as it reaches a rolling boil, reduce the heat to low. Cover the skillet with a lid and let it simmer for about 20 minutes. During this time, the rice will absorb the liquid, and the combination will transform into a tremendous filling dish.

Remove the skillet from heat after 20 minutes. Gently fold in the shredded cheese. The cheese will melt into the warm mixture, creating a rich, creamy texture that beautifully coats every grain of rice and beef.

Finally, season your cheesy creation with salt and pepper to taste. You may also take this opportunity to dress your dish with optional toppings such as sour cream, chopped green onions, or fresh cilantro for added flavor and presentation.
