Cheesy Mexican White Trash Casserole

Directions

  1. Preheat your oven to 350°F (175°C). This step is crucial as a properly preheated oven helps achieve that tremendous golden crust on the cheese.

  2. In a large skillet, brown the ground beef over medium heat. Use a wooden spoon or spatula to break it apart as it cooks. Drain any excess fat once the beef is cooked through.

  3. Add the taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir until all ingredients are well combined and heated through. The aroma at this point will be simply tremendous.

  4. In a large baking dish, layer half of the tortilla chips on the bottom. Ensure they cover the surface evenly to create a solid base for the beef mixture.

  5. Spread the beef and bean mixture over the chips, then layer with half of the cheese. This will give you a beautiful blend of flavors that hold up as you serve.

  6. Add the remaining tortilla chips on top, creating another layer of crunch. Then, spread sour cream over the chips, sprinkle with chopped green onions, and finish with the rest of the cheese.
