Begin by boiling the pasta. In a large pot, bring water to a boil and add a generous pinch of salt along with a splash of oil. Add the uncooked pasta and boil it until al dente. This usually takes about 8 minutes, but be sure to check the package instructions. When ready, drain the pasta in a colander and reserve some pasta water for later.

Next, heat 2 tablespoons of oil in a large skillet over medium heat. Once hot, add the minced garlic and sauté it gently until it turns a light golden color. This should take about 1 to 2 minutes. Be careful not to burn the garlic, as it will become bitter.

Now it’s time to add the chicken to the pan. Stir in the bite-sized pieces and cook for 3–4 minutes, or until the chicken turns white. Ensure the chicken is thoroughly cooked and tender.

Sprinkle in the salt, black pepper, red chilli powder, garlic powder, paprika, onion powder, and oregano. Stir the mixture well, allowing the chicken to soak up those tremendous spices.

Add the tomato paste and a teaspoon of sriracha or chilli sauce into the pan. Cook for about 1 minute, stirring continuously until everything is well combined and fragrant.

Pour in the milk and double cream, bringing the mixture to a gentle simmer over medium-high heat. Stir continuously until the sauce becomes bubbling and thickens, which should take around 2–3 minutes.

Time for the cheese! Gradually add the mozzarella cheese into the sauce, stirring constantly until it melts and creates a smooth, creamy texture. This is where the dish truly comes alive.

To adjust the sauce’s consistency, gradually add the reserved pasta water. Stir well and bring it back to a small boil. The sauce should be creamy and cling nicely to the pasta.

Finally, add the cooked pasta into the pan, gently coating it in the cheesy sauce. Heat through for a few minutes, making sure every piece of pasta is enveloped in that tremendous goodness.

Serve your Cheesy Chicken Pasta hot, with an extra sprinkle of mozzarella cheese on top. This final touch adds an appealing look and enhances the overall cheese experience.
