Carrot Cake Cheesecake Cake

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan to ensure easy removal of your tremendous creation later on.

  2. In a large mixing bowl, combine the grated carrots, sugar, brown sugar, and vegetable oil. Mix everything together until well combined. Add the eggs, one at a time, blending after each addition to create a tremendous batter that is rich and vibrant.

  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, and nutmeg. Gradually add this dry mixture to the carrot mixture, stirring until just combined. To finish the batter, fold in the drained crushed pineapple for added moisture and flavor.

  4. In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy. Mix in the sour cream and flour until just combined, creating a luscious filling.

  5. To assemble, pour half of the carrot mixture into the prepared springform pan. Gently spread the cheesecake mixture on top of the carrot batter, then layer the remaining carrot mixture over it. This creates beautiful layers that will make your cake visually stunning.
