Directions
-
Preheat the oven. Start by preheating your oven to 350°F (175°C). While the oven heats, prepare a 9-inch springform pan by greasing it lightly. This ensures that your cheesecake comes out easily.
-
Make the brownie base. In a medium saucepan, melt the unsalted butter over low heat. Once melted, remove it from the heat and stir in 1 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract.
-
Combine the dry ingredients. Beat in 1/3 cup of cocoa powder, 1/2 cup of all-purpose flour, 1/4 teaspoon of salt, and 1/4 teaspoon of baking powder. Stir until the mixture is well combined; the consistency will be thick and fudgy.
-
Bake the brownie layer. Spread the brownie batter evenly in the prepared springform pan. Bake in the preheated oven for 15-20 minutes. The brownie should look slightly underbaked; this will allow for a tremendous texture.
-
Cool the brownie layer. Once baked, remove the pan from the oven and let the brownie cool while you prepare the cheesecake layer.
-
Prepare the cheesecake filling. In a large mixing bowl, beat 16 ounces of softened cream cheese and 1/2 cup of granulated sugar until smooth.
-
Add eggs. Incorporate the eggs, adding them one at a time and beating well after each addition. Then stir in 1 teaspoon of vanilla extract. This filling should be silky and creamy, a tremendous contrast to the brownie base.
-
Combine layers. Pour the cheesecake batter over the cooled brownie layer, smoothing the top with a spatula.
-
Bake the cheesecake. Bake the dessert for 35-40 minutes, or until the center is set. It’s okay if it quivers slightly in the middle; it will continue to set as it cools. After baking, allow the cheesecake to cool completely before removing it from the springform pan.
-
Prepare the caramel topping. In a small saucepan, combine 1 cup of caramel sauce and 1/4 cup of heavy cream over low heat. Stir until smooth and warmed through.
-
Add the topping. Once the cheesecake is cooled, pour the warmed caramel sauce over the top. Use a spatula to spread it evenly, allowing it to trickle over the edges for a decorative touch. Finish the dessert by garnishing with chocolate shavings for an added visual appeal and flavor.
