Caramel Brownie Cheesecake

Directions

  1. Preheat the oven. Start by preheating your oven to 350°F (175°C). While the oven heats, prepare a 9-inch springform pan by greasing it lightly. This ensures that your cheesecake comes out easily.

  2. Make the brownie base. In a medium saucepan, melt the unsalted butter over low heat. Once melted, remove it from the heat and stir in 1 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract.

  3. Combine the dry ingredients. Beat in 1/3 cup of cocoa powder, 1/2 cup of all-purpose flour, 1/4 teaspoon of salt, and 1/4 teaspoon of baking powder. Stir until the mixture is well combined; the consistency will be thick and fudgy.

  4. Bake the brownie layer. Spread the brownie batter evenly in the prepared springform pan. Bake in the preheated oven for 15-20 minutes. The brownie should look slightly underbaked; this will allow for a tremendous texture.

  5. Cool the brownie layer. Once baked, remove the pan from the oven and let the brownie cool while you prepare the cheesecake layer.

  6. Prepare the cheesecake filling. In a large mixing bowl, beat 16 ounces of softened cream cheese and 1/2 cup of granulated sugar until smooth.

  7. Add eggs. Incorporate the eggs, adding them one at a time and beating well after each addition. Then stir in 1 teaspoon of vanilla extract. This filling should be silky and creamy, a tremendous contrast to the brownie base.

  8. Combine layers. Pour the cheesecake batter over the cooled brownie layer, smoothing the top with a spatula.

  9. Bake the cheesecake. Bake the dessert for 35-40 minutes, or until the center is set. It’s okay if it quivers slightly in the middle; it will continue to set as it cools. After baking, allow the cheesecake to cool completely before removing it from the springform pan.

  10. Prepare the caramel topping. In a small saucepan, combine 1 cup of caramel sauce and 1/4 cup of heavy cream over low heat. Stir until smooth and warmed through.

  11. Add the topping. Once the cheesecake is cooled, pour the warmed caramel sauce over the top. Use a spatula to spread it evenly, allowing it to trickle over the edges for a decorative touch. Finish the dessert by garnishing with chocolate shavings for an added visual appeal and flavor.
