Preheat the oven to 350°F (175°C). Grease and flour two round cake pans to ensure easy removal later.

In a bowl, beat the egg whites until stiff peaks form. This step is crucial for a light and fluffy base.

In another bowl, beat the egg yolks with 1/2 cup of the granulated sugar and vanilla extract until smooth. This mixture will add richness to the cake.

Mix in the flour, baking powder, and salt. Ensure that it’s well incorporated to create a uniform batter. Then, gently fold in the egg whites. This step is vital for creating a tremendous lift in the cake layers.

Stir in the finely chopped apples and pour the batter into the prepared pans, evenly distributing it for consistent baking.

While the cakes are cooling on a wire rack, prepare the filling. In a separate bowl, beat the cream cheese, brown sugar, and cinnamon until smooth and fluffy.
