Begin by preparing the blueberry swirl. In a small saucepan, combine the fresh blueberries, honey, and lemon juice. Place the saucepan over medium heat. Allow the mixture to simmer gently for about 5 minutes. During this time, the blueberries will soften and release their incredible juices, creating a luscious sauce. This step is critical as it brings out the tremendous natural flavor of the blueberries.

If you decide to use cornstarch for added thickness, dissolve it in a little water (about a tablespoon) and stir it into the blueberry mixture. Continue cooking for a minute or two until the sauce thickens. Once done, remove the saucepan from heat and allow the blueberry compote to cool completely.

Next, in a mixing bowl, combine the Greek yogurt and vanilla extract. Stir until smooth and creamy. At this stage, taste the yogurt. If you desire more sweetness, feel free to add additional honey or maple syrup. Remember, the balance of flavors is quite tremendous, and you want the yogurt to be sweet enough to complement the tanginess of the blueberries.

Now the fun begins! Spoon the yogurt mixture into silicone molds or mini muffin tins, filling them about three-quarters full. This will create a lovely base that holds the blueberry swirl beautifully.

Take a spoonful of the cooled blueberry compote and drop it on top of each yogurt-filled mold. Using a toothpick, gently swirl the blueberry compote into the yogurt. Aim for a marbled effect instead of fully mixing them together. This visual appeal is not only delightful but enhances the experience.

Once all molds are filled and swirled, place them in the freezer. Allow them to freeze for at least 3 hours or until solid. This freezing process locks in the flavors while creating those blissfully cool bites.

When you are ready to enjoy your Blueberry Swirl Yogurt Bites, carefully remove them from the molds. Store any leftovers in an airtight container in the freezer. Itβs best to let them sit at room temperature for 2 to 3 minutes before eating for the most enjoyable texture.
