Blueberry Crumb Bars

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish. This will ensure your crumb bars can be easily removed once baked. The tantalizing aroma will fill your kitchen, hinting at the tremendous treat to come.

  2. In a mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This key step helps to aerate the mixture, making for a tender base.

  3. Add 2 cups of flour, rolled oats, baking powder, and salt to the creamed mixture. Mix until crumbly. The oat flakes will add a rustic feel, enhancing the texture of the crust.

  4. Press half of this mixture into the bottom of your prepared baking dish. Make sure to pack it down evenly, creating a lovely foundation for the blueberries.

  5. In another bowl, toss the fresh blueberries with lemon juice. This brightens their natural sweetness. Pour the blueberry mixture over the pressed crust, spreading it evenly for maximum flavor in every bite.

  6. Crumble the remaining mixture over the blueberries. The goal is to create a beautiful, uneven surface that will bake into a tremendous crumble.

  7. In a small bowl, combine brown sugar, flour, and oats for the topping. Sprinkle this mixture generously over the top of the crumb bars. This layer will caramelize nicely during baking, adding an irresistible sweetness.

  8. Bake for 45-50 minutes, or until the top is golden brown. The edges may begin to crisp, enveloping the blueberry filling in a warm embrace, creating a visual and olfactory treat.

  9. Once baked, let the bars cool in the pan before cutting into squares. This will ensure the bars hold their shape and are easier to serve. The cooled bars will present beautifully, ready to impress yourself and your guests.
