Preheat the oven to 400°F (200°C). This step ensures that the pastry will bake to a perfectly golden color.

Roll out the puff pastry on a lightly floured surface. Aim for about 1/8-inch thickness so that it puffs up nicely during baking.

In a bowl, mix together the blue cheese, walnuts, thyme, salt, and pepper. Make sure to combine them well for a tremendous flavor in every bite.

Spread the cheese mixture evenly over the puff pastry. Leave a small border around the edges to ensure that the filling doesn’t ooze out during baking.

Roll the pastry tightly into a log. Start from one edge and roll towards the other edge, ensuring the filling stays intact.

Cut the log into slices about 1 inch thick. Use a sharp knife for clean cuts without squishing the pastry.

Place the slices on a baking sheet lined with parchment paper. This will help prevent sticking and make cleanup easier.

Brush the tops with beaten egg. This step gives the pastry a beautiful, glossy finish as it bakes.

Bake for 15-20 minutes or until golden brown. Watch closely to avoid burning; the aroma will be tremendous!
