Blackberry Pistachio Dream Bars

Directions

  1. Start by preparing the base. In a mixing bowl, combine the crushed digestive biscuits with the melted butter. Mix until the biscuits are fully coated. This will create a tremendous foundation for your bars.

  2. Line an 8×8 inch baking pan with parchment paper. Press the biscuit mixture firmly into the bottom of the pan to create an even layer. Chill this base in the refrigerator for about 20 minutes to help it set.

  3. While the base chills, prepare the pistachio filling. In a blender or food processor, blend the finely ground pistachios with confectioners’ sugar and heavy cream until the mixture is smooth and creamy. This tremendous layer will add a nutty richness to your dream bars.

  4. Once the base is set, pour the pistachio filling over it, spreading it out evenly. Return the pan to the refrigerator for another 20 minutes to allow the pistachio layer to firm up.

  5. Next, make the cream cheese layer. In a mixing bowl, beat the softened cream cheese with confectioners’ sugar and vanilla extract until creamy and smooth. This layer adds a wonderful tanginess that balances the sweetness of the blackberry topping.

  6. Spread the cream cheese mixture evenly over the chilled pistachio layer in the baking pan. Chill the pan once more until this layer has set.

  7. Now it’s time for the blackberry topping. In a medium saucepan over medium heat, combine the fresh blackberries, granulated sugar, lemon juice, and cornstarch. Stir gently until the mixture begins to bubble and thicken. This process should take around 5 to 7 minutes. Once thickened, remove from heat and let it cool slightly before spreading it over the cream cheese layer.

  8. After spreading the blackberry mixture, return the pan to the refrigerator once again and allow it to sit until the bars are completely set, usually about 2 hours.

  9. When ready to serve, carefully lift the bars out of the pan using the parchment paper. Slice into squares and sprinkle with chopped pistachios for an added crunch. Garnish with fresh blackberries for a beautiful presentation.
