Black Forest Swiss Roll

Ingredients

The Base:

  • 4 eggs (separated)
  • 120 g sugar
  • 100 g flour
  • 20 g unsweetened cocoa powder
  • 1 pinch of salt

The Filling:

  • 200 ml heavy cream, very cold
  • 50 g powdered sugar
  • 1 packet of vanilla sugar (or 1 tsp vanilla extract)
  • 200 g canned cherries or amarena cherries (well drained)

For Decoration:

  • 50 g dark chocolate, grated or in shavings
  • 50 ml cherry juice or kirsch (optional)
  • 20 g sugar (optional)
  • Extra whipped cream (for decoration)
  • Chocolate shavings (for decoration)
  • A few whole cherries (for decoration)
