Ingredients
The Base
- 2 cups (250g) all-purpose flour
- 3/4 cup (75g) cocoa powder
- 2 cups (400g) granulated sugar
- 2 teaspoons baking powder
- 1 + 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup (240ml) buttermilk (or 1 cup milk + 1 tablespoon lemon juice)
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup (240ml) hot coffee or hot water
The Filling
- 2 cups (200g) cherries (fresh or canned)
- 1/4 cup (50g) granulated sugar (for filling)
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon lemon juice
- 1 tablespoon cherry syrup or rum (optional)
The Buttercream
- 1 cup (225g) butter (at room temperature)
- 4 cups (500g) powdered sugar
- 3 tablespoons cocoa powder
- 3 tablespoons milk or cream
- 1 teaspoon vanilla extract (for buttercream)
- A pinch of salt
The Decoration
- Chocolate shavings or curls
- Fresh or cocktail cherries
