Black Forest Collapse Cake

Ingredients

The Base

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (75g) cocoa powder
  • 2 cups (400g) granulated sugar
  • 2 teaspoons baking powder
  • 1 + 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup (240ml) buttermilk (or 1 cup milk + 1 tablespoon lemon juice)
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) hot coffee or hot water

The Filling

  • 2 cups (200g) cherries (fresh or canned)
  • 1/4 cup (50g) granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 tablespoon cherry syrup or rum (optional)

The Buttercream

  • 1 cup (225g) butter (at room temperature)
  • 4 cups (500g) powdered sugar
  • 3 tablespoons cocoa powder
  • 3 tablespoons milk or cream
  • 1 teaspoon vanilla extract (for buttercream)
  • A pinch of salt

The Decoration

  • Chocolate shavings or curls
  • Fresh or cocktail cherries
