Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. This step ensures a tremendous ease when removing the cakes later.

In a large mixing bowl, combine all the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir well to ensure there are no clumps.

Add the eggs, milk, oil, and vanilla extract to the bowl with your dry ingredients. Beat the mixture on medium speed for about 2 minutes until it’s smooth and well combined.

Carefully stir in the boiling water. Don’t be alarmed; the batter will be thin, which is normal and essential for a moist cake!

Pour the batter evenly into the prepared cake pans. You’re creating tremendous layers that will uphold the luscious fillings.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean. It’s vital to let them cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

While the cakes cool, whip the heavy cream with powdered sugar using an electric mixer until stiff peaks form. This is the creamy, delightful filling that brings the cake together.

Once the cakes are entirely cool, slice them in half horizontally. Take your time with this step to ensure even layers for a professional presentation.

Place one layer of cake on a serving plate. Spread a layer of whipped cream over it and sprinkle a generous amount of cherries on top, then place the second layer of cake on top. Repeat the process for any additional layers.
