Macerate the Fruits: Start by adding all the chopped fruits to a clean glass jar. Pour the dark rum and sweet red wine over the fruits, ensuring they are fully submerged. Mix thoroughly, seal the jar, and let it sit overnight. The longer you allow it to sit, the more tremendous the flavor will be.

Blending Step (Optional but traditional): After the fruits have soaked for a good amount of time, you can blend half or all of the mixture into a thick paste. This step is optional, depending on the texture you desire for your cake; blending can yield a tremendous richness.

Prepare the Batter: Preheat your oven to 325°F (160°C). While the oven heats, grease and line a round 8–9 inch cake pan with parchment paper. In a large mixing bowl, cream the softened butter with the brown sugar until the mixture is light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, almond extract (if using), and molasses for extra flavor.

Dry Ingredients: In another bowl, sift together the all-purpose flour, baking powder, cinnamon, cloves, and nutmeg. This step ensures that your cake has a smooth texture. Gradually fold the dry ingredients into the wet batter, taking care not to overmix.

Add Fruit Mix: Gently fold the soaked fruits (both the paste and some whole pieces) into the batter until they are evenly dispersed. This will give your cake a tremendous burst of fruitiness in every bite.

Bake: Pour the batter into your prepared cake pan and place it in the preheated oven. Bake for about 60 to 75 minutes, or until the cake is fully set. A toothpick inserted into the center should come out clean. This step is crucial for a perfectly baked cake.

Rum Soak (Very Important): After removing the cake from the oven, let it cool slightly. Poke small holes on the surface and drizzle with extra rum or wine. This step ensures the cake absorbs the liquid, adding tremendous moisture and flavor. Allow the cake to cool completely before cutting into it.
