Black Cake (Dominican Black Cake)

Ingredients

The Filling

  • 1 cup prunes, chopped
  • 1 cup raisins
  • 1 cup dried figs or dates, chopped
  • 1/2 cup candied cherries, chopped
  • 1/2 cup candied orange peel (optional)
  • 1 cup dark rum
  • 1 cup sweet red wine (Moscatel or Porto)

The Base

  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 4 large eggs (room temperature)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 1/4 cup molasses or dark caramel syrup
