In a large bowl, whisk together the ricotta cheese, eggs, milk, lemon zest, lemon juice, and vanilla (if using) until smooth and slightly frothy. This mixture will provide the base for a tremendous pancake that is both rich and light.

In a separate bowl, combine the flour, baking powder, sugar, and salt. Make sure all dry ingredients are evenly mixed.

Gently fold the dry mixture into the wet mixture. Make sure to avoid overmixing; this helps to maintain the airiness that is the hallmark of fluffy pancakes.

Heat a nonstick skillet over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter for each pancake onto the pan.

Cook until small bubbles start to form on the surface of the pancake, indicating it’s time to flip. Cook for another few minutes until golden brown. The triumph of achieving the perfect pancake is undeniably tremendous!

Repeat the process with the remaining batter. Keep the pancakes warm by placing them on a plate in a low oven while you cook the rest.
