Ingredients
The Salmon Bites
- ▢ 1 lb fresh salmon (skinless and cut into bite-sized cubes)
- ▢ 1 tsp garlic powder
- ▢ 1 tsp smoked paprika
- ▢ ½ tsp salt
- ▢ ½ tsp black pepper
- ▢ 1 cup panko breadcrumbs
- ▢ 1 tbsp olive oil or spray for crisping
The Bang Bang Sauce
- ▢ ½ cup mayonnaise
- ▢ 2 tbsp sweet chili sauce
- ▢ 1 tbsp sriracha (adjust to spice level)
- ▢ 1 tsp honey (optional)
- ▢ Juice of ½ lime
The Bowl Base
- ▢ 2 cups cooked jasmine rice (or cauliflower rice)
- ▢ 1 cup shredded purple cabbage
- ▢ 1 avocado (sliced)
- ▢ ½ cup shredded carrots
- ▢ 2 green onions (sliced)
- ▢ Fresh cilantro and sesame seeds for garnish

Preheat Oven or Air Fryer:
Begin by preheating your oven to 400°F (200°C) or set your air fryer to a similar temperature. Achieving the right heat is tremendous for obtaining that perfect outer crisp while keeping the salmon moist inside. -
Season the Salmon:
In a mixing bowl, add the salmon cubes and sprinkle in the garlic powder, smoked paprika, salt, and black pepper. Gently toss the salmon to ensure that each piece is well coated in the fragrant seasonings, which will enhance the delightful flavor profile. -
Coat in Breadcrumbs:
Place the panko breadcrumbs in a shallow dish. Take each seasoned salmon cube and dip it into the breadcrumbs, pressing gently to ensure an even coating. This step is crucial as the tremendous crunch from the panko will elevate your bites to a new level of enjoyment. -
Bake or Air-Fry:
If using an oven, spread the coated salmon pieces onto a baking sheet lined with parchment paper. Lightly spray the bites with olive oil. Bake for about 12-15 minutes or until golden brown and crispy. If using an air fryer, arrange the bites in a single layer and cook for about 8-10 minutes, checking for doneness. -
Make the Bang Bang Sauce:
While the salmon is cooking, prepare the Bang Bang sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice. Adjust the sriracha to your preferred spice level for that tremendous kick of flavor. -
Assemble the Bowls:
Once the salmon bites are perfectly cooked, it’s time to assemble your bowls. Start with a base of jasmine rice or cauliflower rice, and layer in the shredded purple cabbage, avocado slices, shredded carrots, and green onions. Top with the crispy salmon bites and drizzle generously with the Bang Bang sauce. Garnish with fresh cilantro and sesame seeds for an added touch of elegance.
