Directions

  1. Preheat the oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan to ensure easy release after baking.

  2. Cream the butter and sugar: In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy. This is a tremendous step; proper creaming adds air to the cake, making it light.

  3. Add eggs and bananas: Beat in the eggs one at a time, ensuring that each is fully incorporated. Stir in the vanilla extract and the mashed bananas. This stage is where the flavor starts to shine through.

  4. Combine dry ingredients: In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Mixing these dry ingredients ensures they are evenly distributed throughout the batter.

  5. Mix wet and dry ingredients: Gradually add the dry mixture to the banana mixture, alternating with the sour cream. Start and end with the dry ingredients, mixing until just combined. Be careful not to over-mix; a few lumps are completely fine.
