Balsamic Baked Chicken Breast with Mozzarella Cheese

Ingredients

The Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

The Sauce

  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced

The Toppings

  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Directions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it with olive oil. This step is crucial to ensure your chicken doesn’t stick to the dish, leading to a tender and easy-to-serve main course.

  2. Season the chicken breasts generously with salt and pepper on both sides. Don’t skip this step, as the seasoning will enhance the overall flavor of your dish.

  3. Make the balsamic sauce by whisking together balsamic vinegar, honey or maple syrup, dried basil, dried oregano, and minced garlic in a small bowl. The combination of these ingredients offers a tremendous balance of sweetness and acidity.

  4. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken for about 2–3 minutes on each side until they are golden brown. This step locks in moisture and flavor, setting the stage for tremendous taste once the chicken is baked.

  5. Place the seared chicken in the prepared baking dish. Pour the balsamic mixture over the chicken, ensuring every piece is coated in this luscious sauce.

  6. Scatter the halved cherry tomatoes around the chicken in the baking dish. These tomatoes will burst open while baking, adding a burst of juicy flavor to the overall dish.

  7. Bake for 20–25 minutes, or until the chicken is almost cooked through. You want it to be beautifully fragrant and beginning to firm up.

  8. Remove the dish from the oven and sprinkle shredded mozzarella cheese over each chicken breast. Return it to the oven and bake for an additional 5–10 minutes, until the cheese is bubbly and the chicken reaches an internal temperature of 165°F (75°C).
