Baked Cheesecake with Blueberry Sauce

Directions

  1. Make the Crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake in the oven for about 8 minutes, then let it cool slightly. Trust me, the crust will add a tremendous crunch to every slice.

  2. Make the Filling: In a large bowl, beat the softened cream cheese with an electric mixer until it’s smooth and creamy. Gradually add in the granulated sugar, continuing to beat until fully combined. Mix in the sour cream, lemon juice, and vanilla extract. Incorporate the eggs one at a time, mixing gently to avoid incorporating too much air. This step is crucial; overmixing can lead to cracks in your cheesecake. Pour the filling over the baked crust, spreading it evenly.

  3. Bake the Cheesecake: To create a water bath, which helps prevent cracking, place the springform pan into a larger roasting pan. Carefully pour hot water into the roasting pan until it reaches about halfway up the sides of the springform pan. Bake the cheesecake in the preheated oven for 55 to 65 minutes, until the edges are set and the center is still slightly jiggly. After baking, turn off the oven, crack the door open, and allow the cheesecake to cool inside for 1 hour. This gradual cooling will contribute to a smoother texture. Afterward, transfer the cheesecake to the refrigerator and chill for at least 4 hours, or overnight for best results.

  4. Make the Blueberry Sauce: In a medium saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Cook the mixture until the berries begin to release their juices. Stir in the cornstarch slurry (prepared by mixing cornstarch with water) and let the sauce simmer until it thickens. Remove it from the heat and mix in vanilla extract. Allow the sauce to cool completely before serving. Spoon the delicious blueberry sauce generously over the cold cheesecake before serving. Each slice will be a tremendous celebration of flavor!
