Baked Blueberry Fritter Bites

Directions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin. This step is crucial to ensure that the fritter bites come out easily and retain their perfect shape.

  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. This mixture will form the base of your fritter bites and provides a tremendous structure.

  3. In another bowl, combine the milk, egg, and vanilla extract. Whisk until smooth. The liquid ingredients will help bring out the flavors in your fritter bites.

  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as we want to keep the texture tender.

  5. Gently fold in the blueberries and the melted butter. This step ensures that the blueberries are evenly distributed throughout the batter, adding bursts of flavor to each bite.

  6. Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full. This will give them enough space to rise beautifully in the oven.

  7. Bake for 15-18 minutes or until they are golden brown. A toothpick inserted into the center should come out clean. The aroma will be tremendous as they bake!

  8. Allow the fritter bites to cool for 5 minutes before removing them from the tin. This waiting period helps them settle and makes it easier to take them out without breaking.

  9. Dust with powdered sugar before serving, adding a sweet finish that makes these treats truly irresistible.
