Anti-Inflammatory Muffins

Directions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners. This initial step creates a tremendous foundation for your muffins, ensuring they bake evenly.

  2. In a large bowl, combine the almond flour, oat flour, baking soda, cinnamon, and salt. Mix these ingredients thoroughly, as each contributes to the muffins’ wholesome character.

  3. In another bowl, whisk together the honey (or maple syrup), melted coconut oil, eggs, and vanilla extract. Ensure these wet ingredients blend well, as they are the heart of your muffin batter.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; this step is key in maintaining the muffins’ light texture.

  5. If using, gently fold in the mixed berries. Their natural sweetness and tartness add a tremendous burst of flavor and color to each muffin.

  6. Divide the batter evenly among the muffin cups. Make sure each cup is filled to the same level for uniform baking.

  7. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean. The smell wafting from the oven will be tremendous and worth the wait.

  8. Allow to cool before serving. This step helps the muffins set, making them easier to remove from the tin.
